One of our meals during our ultimate reset was Kabocha squash. It was delicious and both John and I enjoyed it. Click here for video. This will totally be a new staple on our menu. My garlic-tahini sauce did come out as smooth as the picture in the book. But it was pretty good! We both also ate the skin, it's thin and full of fiber 😃 We also learned some cool facts about this yummy squash..... ✅ It's an anti inflammatory It's full of: ✅ Beta carotene ✅ Iron ✅ Vitamins A, C, fiber and some B vitamins And..... ✅ it's 40 calories ✅ has less than half the carbs of most other squash about 7 grams per cup. Most likely won't be making the chickpea mash for breakfast after the Reset, the microgreen salad will make a comeback, not my favorite but it's good and filling, the Kabocha squash heck yes! And we even got to try it in a coconut Kabocha squash soup the next day! Think I may have made it too thick it was more like porridge. Not horrible,...
