Love learning new things!

One of our meals during our ultimate reset was Kabocha squash. It was delicious and both John and I enjoyed it.  Click here for video. This will totally be a new staple on our menu. My garlic-tahini sauce did come out as smooth as the picture in the book. But it was pretty good! We both also ate the skin, it's thin and full of fiber 😃 We also learned some cool facts about this yummy squash..... ✅ It's an anti inflammatory It's full of: ✅ Beta carotene ✅ Iron ✅ Vitamins A, C, fiber and some B vitamins And..... ✅ it's 40 calories ✅ has less than half the carbs of most other squash about 7 grams per cup. Most likely won't be making the chickpea mash for breakfast after the Reset, the microgreen salad will make a comeback, not my favorite but it's good and filling, the Kabocha squash heck yes! And we even got to try it in a coconut Kabocha squash soup the next day!  Think I may have made it too thick it was more like porridge.  Not horrible,

Our Ulitmate Reset Journey

So these are our before and after pictures following the 21 Day nutritional cleanse that ended yesterday. Along with a little reminder of where we both were before we started our journey to a healthier lifestyle. WARNING ......long post, you know I can't share these pictures without also sharing a little of my heart and soul.... I started my journey to good health two years ago and I lost over 50 pounds. Over the past two years I have lost and then gained back an additional 10 to 12 pounds, maintaining and on occasion going up and down through vacations, celebrations and the occasional indulgences. That I have been able to maintain my weight loss is new for me and a total grace. Because in the past every time I went on a “diet” and lost weight, and I have tried them all and I was successful numerous times in losing weight, but the second I stopped the “diet” I would gain all the weight back and THEN some. A little photo journal - Meal planning and preparation is key!

Day 17 of 21 Thought I would share a little photo journal of some of  our meals with you today.  100 % committment, preparation, planning and a positive mindset is key and how as of today I have lost 17.8 pounds and John has lost 11.7 pounds.

And the Journey continues....

Day 15 of 21 The detox phase of our nutritional cleanse is over and today we head into the third phase and final week. In two weeks, I have lost 15.5 pounds and my beloved has lost 10.7 pounds.  Through healthy and clean eating of real foods, fruits and vegetables, proper hydration and healthy organic supplements we have reclaimed our bodies natural balance, released the unwanted compounds that were holding our sytems back and began the detoxification process. Last night before dinner we drank our last detox shake and this morning we begin the process of restoring our digestive systems and our other internal processes through more clean eating, hydration and healthy supplements so they can operate at thier maximum efficiency.   This cleasnse was the jumpstart that both John and I needed to help us reach our goals. He is headed towrds ONEderland and is just over 5 pounds away from reaching his goal and am determined to lose another 50 pounds this year and just over 34 p

Transformation Tuesday

I am passionate about my journey to live a healthier lifestyle and the mission to help others who want the same. It's not always easy to do and it takes intention, purpose, commitment and effort but it is worth every second to live the life I am living today. Life is precious and I am not willing to waste a moment of this precious gift we are given and so I have begun to live each day a little bo lder. Kind of like the leggins that I am rocking in this picture. I have a lot to be grateful for. I have lost weight, become stronger and more fit, mind, body, spirit and soul and I have come off all medications for Type 2 Diabetes and High Cholesterol having reversed my diabetes and no longer have high cholesterol. It feels wonderful to know that through diet and exercise I am able to manage my health and to live a healthier lifestyle. Feeling Fabulous!

Day 12 of 21 And I am feeling fabulous! I wish that I had great words of wisdom to share on this 12th day of the reset.  But none come to mind.  Except that we are all in, 100%  committed and going strong! We spent some time today getting food prepared for the week and we are looking forward to starting our third week on Wednesday. Losing weight has been amazing, this journey has been an eyeopener in so many ways and I will share it all with you.  And I think we are well on our way to a number of new habits.  But I will be grateful to not have to look at a book to tell me what is on the menu today. Although having said that, there is and has been a great deal of value not having to think about the menu and just folloiwing it. But I will be glad to get back to our routine with a number of modications thanks to the reset. Sunday Food Prep and Planning

Sunday is typically prep day and time for us to get set for the week ahead.  As we are making it a point to be all in  and 100% that means we have to stay ahead of our schedule and make sure we have our healthy options ready to go.   We took some time today to make a few more microgreen salads that we will need for the week ahead.  Loving our new glass containers, they stack wonderfully in the refrigerator and fit the portion size of the microgreen salad perfectly.    We aslo spent a little time getting some of the components to our dinner tonight ready to go.   If you have seen any of my videos you know that we usually roast our beets with the skins on and then peel them, its so much easier and its what we are used to. Today I followed the recipe in the reset book and peeled the beets while they were raw and then roasted them.  We are having them for dinner  tonight so I will find out later if there is a difference in taste.  I much prefer peeling them after cooking, b

Keeps getting better and better

  Day 11 / 21 I am down 14.6 pounds My beloved is down 8.8 pounds That was first thing this morning.  In fact I weighted myself in the wee early hours of the morning.  When I got up a few hours later I as down another pound. I weighed myself several times thinking the scale was playing tricks with me.  I guess I have learned to never underestimate those early morning bathroom runs and a good nights rest.   I know I have shared my story in my blogs of how I reversed my type 2 diabetes and have come off of all of my medications for diabetes, high cholesterol and neuropathy that I had been experiencing as a result of the diabetes. Its been over a year now that I have been off all medications with the exception of allergy and asthma controllers as I might need them.  By the way I rarely if ever need my asthma controllers but had until recently continued with over the counter allergy controllers.   So other than the occasional ibuprophen for long standing neck and back

There is value in planning and preparing

Day 10 of 21 This is a little glimpse into our refrigerator. You can see my lunch bag is all set and ready to go, usually John's is beside mine but he is working from home so no need for his bag, and frankly a good thing, not sure there would be room.  I talk a lot about preparation and planning.  That has been key for us. We make it a point to say at least a day ahead of our meals, prep in advance what we need to and and portion out what we can so it is easy and ready to go when we need it.  In the end the time that we spend preparing not only helps us stay on track it saves us time in the long run. Everyone has their own way of doing things, this works for us and it has helped us stay 100% on track and committed, its working and so we are sticking with it. Make no mistake, its not easy. There is a lot of thought, preparation and time that we have collectively invested.  And that is all good because we are WORTH every precious minute. And we are reaping the bene

Toughest day yet

Day 9 of 21 You know this microgreen salad and roasted pumpkins seeds is growing on me. The pumpkin seeds had me at hello, the microgreens, well let's just say me and salads have always had a rocky relationship so we did not get off on a good start I was eating them but not thrilled about it. I think we turned a corner today, I loved the rice and beans and now I am loving my salad! A new habit I am making that I can keep up with after this nutritional cleanse is over! Day 9 and I am still ALL IN, committed 100% , going strong and I have lost 11.5 pounds so far. Makes this salad taste better than ever! Breakfast was not so stellar, mashed chickpeas in a wee little bowl.  Surprisingly it was actually filling but not satisfying.  Snack was blueberries and a green apple.   Joy of joy a few hours before dinner we had our detox drink. I am actually not minding it as much as I did when I had it doing the 3 day refresh. It was not my favorite at all.  But
